This is one of the three cuts derived from a bone-in round and is the inside or medial part of the round. It is removed from the bone-in round (along the natural seam divisions) and from the knuckle, by a cut following the line of the femur bone. The scrotal ( superficial inguinal ) gland and associated fat is removed.

The topside is derived in the same manner as the inside round but and associated fat is left intact.
